Here at Zone 7, nothing says “Spring has sprung” like the start of asparagus season! This seasonal favorite grows straight out of the ground and looks just like you see it on your plate. Asparagus is harvested daily starting in mid-April for six weeks. After that time period, the farmers have to let the stalks grow into “ferns” so the perennial plant can get enough energy into its storage roots to do it all over again next year. Almost all the varieties grown on the East Coast are bred using traditional techniques at Rutgers University, so be sure to get your Jersey grass while it lasts!
